We are firmly convinced that quality can only be obtained by respecting nature in its infinite changeability with organic and sustainable agriculture. We farm in the same way our ancestors did, but with the curiosity of a child, allowing us to experiment passionately and with conviction.
The Podere l'Assunta is situated in the environs of Poggiolo, on a little hill that looks west towards the Castle of Monteriggioni and south towards Siena, at an altitude just under 1300 feet above sea level. We are invested in conserving our unique and ancient terroir for future generations; as a result, we are rewarded with offerings of unparalleled quality.

Vineyards surrounded by woods of oak and ilex have been typical features of the Sienese countryside since the Middle Ages. In the historical vineyard of la Costa del Pievano, we only cultivate the Sangiovese grape and have reintroduced the alberello technique, a vine-training system that was used here in the 17th century. The grapes are picked by hand during the first ten days of October and then fermented using traditional methods; after aging in wooden barrels for two years, the wine is ready to be bottled. The high quality of the grapes together with the traditional natural vinification process enables us to produce a wine that embodies all the characteristics of our region.

An appreciation of the Good has inspired us to cultivate olive trees, that quintessential element of the Sienese countryside. At the end of October we harvest the earliest ripening variety of olives, the Leccino. In the following three weeks the Frantoio variety is collected, and then, finally, the Moraiolo. Our olives are treated tenderly, handpicked and pressed that very same evening. This care combined with the quality and freshness of our olives produce an oil that has an aromatic bouquet distinctive to this territory.

history
